From the Lauren Alexander Bakery: Soft Chocolate Chip Cookies


I can't just make an ordinary home made chocolate chip cookie anymore. It's an experiment always in the kitchen for me and today's experiment went GREAT! Here is my so very yummy and soft chocolate chip cookie recipe:

1 Cup Whole Wheat Flour
1.25 Cups Whole Wheat Pastry Flour
1 tsp. baking soda
(mix those up and set aside)

1 Cup Butter
3/4 Cup packed brown sugar
1/4 Cup sugar
(cream them with mixer)

1 package instant vanilla jello pudding
(mix that in)

2 eggs
1 tsp. pure almond extract
(bead those in the mixture)

1 bag of chocolate chips
3/4 Cup of rolled oats

Add the flour mix slowly and carefully
Mix in the oats
Add one bag of semi-sweet chocolate chips and mix with big spoon and save a handful to add to the tops of cookies before baking for that perfect look.

Drop by rounded tablespoon on to parchment lined cookie sheets and bake at 350 for 10-12 minutes.

Try not to eat all the dough before baking. They are really good baked.

I will definitely try these. Have you added nuts to this recipe?

I have not tried them with nuts (I love nuts) but the majority of my family believes them to be like adding wood chips to foods. :-(
